Vegetable Noodle Soup

I’m so excited to share this recipe with you! For a long time now I have been wanting to find a good vegetable noodle soup. I wanted it to be just like chicken noodle soup, the ultimate comfort food when I was a kid. However, I just couldn’t find a good option in the stores. So I made my own! I hope you enjoy it as much as I have been!



  • 2.5 cups carrots
  • 2 cups celery
  • 1 cup parsnip
  • 2 cups onion
  • 4 garlic cloves
  • 1 tsp turmeric
  • 1 tsp rubbed sage
  • 1 tsp rosemary
  • 2 cups mushrooms
  • 2 cups noodles
  • 4-6 cups veggie broth


  • Combine carrots, celery, parsnip, onion, garlic, turmeric, rubbed sage, rosemary, and veggie broth in a crock pot. Cook on high for approximately 3 hours or until vegetables are about 3/4 cooked.
  • Add the mushrooms and noodles to the soup. Cook on low for another hour until everything is soft.
  • Enjoy! The soup will store in the fridge for about 1 week.
