I’m so excited to share this recipe with you! For a long time now I have been wanting to find a good vegetable noodle soup. I wanted it to be just like chicken noodle soup, the ultimate comfort food when I was a kid. However, I just couldn’t find a good option in the stores. So I made my own! I hope you enjoy it as much as I have been!
Ingredients
- 2.5 cups carrots
- 2 cups celery
- 1 cup parsnip
- 2 cups onion
- 4 garlic cloves
- 1 tsp turmeric
- 1 tsp rubbed sage
- 1 tsp rosemary
- 2 cups mushrooms
- 2 cups noodles
- 4-6 cups veggie broth
Directions
- Combine carrots, celery, parsnip, onion, garlic, turmeric, rubbed sage, rosemary, and veggie broth in a crock pot. Cook on high for approximately 3 hours or until vegetables are about 3/4 cooked.
- Add the mushrooms and noodles to the soup. Cook on low for another hour until everything is soft.
- Enjoy! The soup will store in the fridge for about 1 week.
