This tabbouleh is super simple to make! It’s the perfect salad to have in the fridge as a to-go lunch or a ready-made dinner when you get home. The light ingredients are refreshing but still filling for the last few warm weeks we have before it starts to get cold outside.
You will need:
1 cup of uncooked quinoa
1/2 cup of halved black olives
1.5 large tomatoes
2 medium cucumbers
1/4 teaspoon cumin
1/4 cup cilantro
The juice of 1/2 a large lemon
3 tablespoons olive oil
Salt and pepper to taste
Cook the quinoa according to the directions on your box/bag of quinoa
While your quinoa is cooking chop the vegetables and cilantro
Mix the quinoa with the vegetables and spices
Add the lemon juice and olive oil and mix thoroughly
That’s all! How simple is that? You can eat this right away or let it cool in the fridge. I love to eat this plain or mix in some feta cheese crumbles before I eat it! This will store in an airtight container in the fridge for about 1 week.
